If wishing something were good was enough to make it good, this dish would have been a success. Sometimes simple ingredients come together magically to make something that is more than the sum of their parts. Sometimes, however, the parts are exactly equal to the sum.
Every time I tried to think of a way to improve this recipe (cut the potatoes smaller so more of their surface gets browned; perhaps par-cooking them in the microwave before the oven) I quickly came to the same conclusion: there are already plenty of functional recipes out there. I don’t need to re-invent the roasted potato.
