This grilled cheese was so good even my daughter loved it, and in case you can’t tell from the picture, it’s oozing caramelized onions. Maybe you have one of those kids who was eating capers and scallops and olives and all kinds of sophisticated flavors from Day One (and I’m not sure I even believe people who say this) but I have the regular kind of kid, one who thinks Onion Soup is some kind of unfunny joke.
And the onions are, of course, what elevates this sandwich above the quotidien. It’s a fairly quick caramelization enhanced by a tiny bit of brown sugar and a splash of balsamic vinegar. As written it makes more onion confit than you will need for the recipe and I urge you to start thinking of other ways to use it. And I’m not ruling out the most obvious: “eat with a big spoon.” On pizza also sounds pretty ideal.
